I never used to be a breakfast person, let me tell you, this has changed since i found this marvellous idea... Here is the seriously simple recipe for some baked eggs in an avocado.

Seriously,3 this is so delicious and filling. It also only adds up to approx 270 calories!
I also like to use the excess flesh to make a guacamole to spread on my toast. Just add some chopped garlic and salt to the mashed flesh and viola, delicious condiment!
You'll need:
- 1 Avocado (preferably quite ripe)
- 2 or 3 cherry tomatoes
- 1 clove of garlic
- 2 medium eggs
- a few fresh coriander leaves
What you gota do:
- Preheat your oven to 230 degrees Celsius
- Half your avocado and remove the stone. Scoop out a tablespoon of flesh from each half (to make room for the eggs)
- Crack and empty one egg into each half of your avocado.
- Add diced cherry tomatoes and chopped garlic to each half.
- Place in the oven for 20-22 minutes.
- Serve with fresh coriander on top and salt and peper to taste/
